Guilt-Free Holiday Dessert Recipe: Sweet Potato and Dried Fruit Bun

Delicious holiday desserts don’t have to be fattening! Impress your family with this scrumptious sweet potato and dried fruit bun recipe:

Ingredients:

3 eggs
4 ounces of sugar
120 ml of olive oil
1 sweet potato
1 tablespoon of baking soda
6 ounces of flour
1/4 cup of dried cranberries and raisins mix

Instructions:

1. Peal, cut and cook the sweet potato in abundant water until soft.
2. Mix the cooked sweet potato, sugar, olive oil, baking soda and flour in a bowl or food processor. Pour into an greased oven dish. Add mixture of cranberries and raisins on top.
3. Bake at 350 degrees F for about 25 minutes or until brown on top.

Note: The bun has different aspect depending on what side you show. The smooth side can be further decorated with fresh fruits, if desired.
